   A refrigerator was observed without a thermometer or with a thermometer showing a temperature reading greater than 41 degrees Fahrenheit. CCF Handbook, Section 3.9.2, F.1. (Section 2.1 Health and Safety, Page 3) Food and Nutrition [SR] Comments: During the inspection the refrigerator temperature was reading 60 degrees and was full of food. Technical Assistance from Handbook given: 3.9.2 Food Storage Proper storage of food is essential to prevent food contamination, as well as, insect and rodent infestation. Correct handling and storage of all food is a key component School-Age Child Care Facility Handbook | P a g e 29 in preventing food-borne illnesses. To prevent bacteria growth, cold food must be kept at or below 41 degrees Fahrenheit and hot foods at or above 135 degrees Fahrenheit. This was fixed at time of inspection by the staff who threw away all the milk and perishable items. During the inspection a staff member from the YMCA brought over milk to meet all components for supper. To make sure this doesn't happen again the staff members are going to check the thermometer once the refrigerator was empty and if the temperature is still running high then a new refrigerator will be ordered for the site and in the meantime the provider will food delivered daily to serve. 26. CCF Handbook, Section 3.9.5, C (Section 2.1 Health and Safety, Page 3) Food and Nutrition [SR] Comments: During the inspection Licensing Specialist observed milk in a crate that was sitting on a table and when asked what they were doing with the milk provider stated that it had been delivered today and when asked how long it had been sitting out the provider stated at least 30 minutes. Provider was informed that milk can't sit out for longer than 15 minutes. This was corrected at time of inspection when provider poured out the milk in the sink. Technical Assistance given from handbook: C. Milk and food must not sit out for longer than 15 minutes prior to the beginning of the meal to avoid contamination and spoilage. When asked provider stated that the "site lead" is the one who posts the menu, but she is out on leave. Technical Assistance given from the handbook: H. Any menu substitutions must be noted on the menu. A generalized menu of possible snack choices for programs that receive food donations is acceptable.
