    27. Catered Food and Food Provided by Outside Sources CCF Handbook, Section 7 & Section 3.9.3 (27-05)

Food Acceptance Log was missing or was incomplete in that it did not [have record of food temperature for today]. CCF Handbook, Section 3.9.3, E.1. Food and Nutrition [SR] Comments: Licensing specialist visited facility's kitchen and reviewed the menu which was scheduled to serve tacos. However, provider stated that the food today was rice and pork. When double checking with delivery food temperature logs, there was no record of the food temperature for today. After leaving the kitchen, and working on inspection in the office, the provider returned with completed log based on information provided by the person that received the food. Food was received at 8:30, per the log. When asked if the staff had written the temperature elsewhere, provider responded that she did not. Technical assistance was provided that a log must be maintained for all prepared meals being transported into the facility. The log must be retained for a minimum of 12 months. The log must include the delivery date, time of arrival, quantity and types of food, verification by the recipient of adequate temperatures of food, and the name and signature of the recipient. The facility shall not accept food that is not at the appropriate holding temperature. Meal and snack menus must be planned, written, dated, and posted at the beginning of each week in an easily seen place, accessible to the parents/guardians. Any menu substitutions must be noted on the menu. Meals and snacks are catered by Lincoln Marti. Source: FL DCF CARES inspection 2025-02-04.
